Zürcher Geschnetzeltes is a traditional veal dish from Switzerland. We're told that if you order it in Switzerland the restaurant is required by law to use veal and not pork.
For something different, we paired it with dry Furmint from Hungary, which is the same grape used to make the famous dessert wine Tokaji Aszu. Domaine Hetszolo has a prestigious history and was recently purchased by Cos d’Estournel in Bordeaux. The Furmint was clean and elegant and paired well, but can be hard to find. Riesling also works.
